Vegetarian Poke Bowl

A creative twist on traditional Hawaiian poke bowls, this vegetarian version features chickpeas as a protein source, paired with sweet and tangy pineapple pieces and edamame beans.  Chickpeas are marinated in a blend of various herbs, extra virgin olive oil, vinegar and honey.  The bowl features a medley of rice noodles, broccoli, cucumber, carrots, mixed peppers, all on a bed of spinach, topped with sesame seeds and a tangy Asian dressing.
