Salmon Fillets with Rice and Mixed Salad

Succulent Salmon fillets are cooked to perfection, complimented by sautéed tomato and onion rice.  The aromatic rice is cooked with extra virgin olive oil, salt and pepper, allowing the natural sweetness of the tomatoes and onions to shine through.

Accompanying the salmon and rice is a refreshing mixed greens salad, featuring a medley of lettuce, red onions and sweet tomatoes, accompanied by a light vinaigrette.
