Roasted Butternut Squash & Chickpea Curry with Coconut Rice

This rich and creamy vegetarian curry, features tender butternut squash, (roasted with extra virgin olive oil, herbs and spices), succulent chickpeas, and wilted spinach in a fragrant coconut milk sauce. The subtle sweetness of the squash and coconut milk balances the spiciness and sourness of the curry sauce, which is served over fluffy coconut rice and finished off with fresh coriander.  This dish is a symphony of textures and flavours.
